It's not too hard, what I did was taking the ressource folder from acidanthera official repo (to be sure I have all the elements needed for the theme to work, because if there is one file missing then the GUI will not show up) and I pasted my custom theme files into Ressources/Image folder in order to replace the ones from acidanthera I don't want to use and at the same time keep the files not available for my custom theme (basically the restart/shutdown buttons and the selector for restart/shutdown).
There are already some OpenCore 0.6.8-capable themes designed by others users. For example, Default-StarWars by crhris1111 or BsxDarkFence series by blackosx, all of them high quality themes.
You can also design the one missing if you want, or grab any other icons you like to replace these buttons (and use Icnspack-builder to convert the PNG into ICNS files)
