I don't believe that there is a version of Electron without Node.js and JavaScript. That said - there are several ways to run Python code from Electron, e.g. the python-shell module. See https://github.com/extrabacon/python-shell. So, you could have an Electron wrapper and front end, and use Python for all the back end code, if that would work for you; but I don't think you could avoid JavaScript altogether.
