I've enjoyed using MSW for mocking, way less janky than trying to stub out fetch or whatever, and means if you're in a situation where you can't run the backend locally or connect to some test environment easily, you can still run tests. Also useful to actually manully test the UI in certain circumstances, e.g. if you're doing the implementation on the frontend side but the backend doesn't exist yet.
