I can't get over RosΓ© Pine
There's alabaster.nvim, which only has four color classes, and everything else is black text on white background, or (in the dark version) white text on black background, so it's very readable.
The only light themes I've been able to find with sufficient readability contrast (for me) that are more colorful than that are the light high-contrast version of github-nvim-theme, and Tempus Totus from tempus-themes. I'm sure there exist others, though.

You can always try one of those minimal black-and-white themes with only greyed comments and cursor; I think I like Mies.vim the best for that.
I use gruber-darker.
A custom version of space-nvim
Another colorful theme that is actually pretty readable is papercolor-theme, although it was written for Vim. I used to use it, I just forgot about it. But it's pretty good.
