You can setup things like Plex/Jellyfin, you can run your own Document Server (think google docs) with NextCloud, a file share for your home network (nfs or smb). It's hard to say what you may be in to, but you can learn a lot about networking or containerization (docker or LXC with something like proxmox). I'm not sure what kind of things you are into or would like to learn so it's hard to give suggestions. Learn, host, experience. We use home servers to build a lab, run various solutions to learn how the software works (prepare for a certification), to host/serve services for private/home use. https://github.com/kahun/awesome-sysadmin is another link to share.
