The short and mildly helpful answer is "Use LibWrapper."
In your example you'd first have to find where that method is in a place where libWrapper can see it. For dnd5e's entity class that ends up being game.dnd5e.entities.Actor5e (assigned here). Once you know what prototype you need to modify, you'll end up with something that looks like this:
