Regarding my first question... there are GUI versions of NeoVim like https://github.com/neovide/neovide and so it might be easier to configure one of those to be an option via windows file explorer. Otherwise you want to open a terminal and run nvim filename inside that terminal and it's a reasonable thing to want to do but it's slightly different/more complicated /has additional step compared to a normal GUI program.
