I found this kinda of directory of configs, maybe it can be helpful: https://github.com/caisah/emacs.dz - I'm not sure if they're beginner-friendly, but some seem to be well documented, at least from a quick look.
I went through a similar journey as you. I ended up making a repo (and others graciously contributed) to understand configs and build incrementally with explanations. I eventually shifted over from literate config to "inverse literate" and this is what I use currently. It's not fully documented but all the major pieces are. The readme (with examples) is definitely appropriate and I hope easy to follow but not all features are in the readme: https://github.com/shombando/.emacs.custom
I started out with an empty init.el and only added use-package and the "Make emacs sensible" part from Meatcar's config. After that I used emacs a little and I'm reviewing that config from time to time whenever I feel like I need something.
