Stop expecting that a Mac is going to work the same way as a PC, for starters - if you want absolute control over every facet of the GUI, then macOS is not for you. Try BetterDisplay if the built-in options don't deliver what you wanted; I wouldn't use it myself, but the venerable TinkerTool has some ability to modify font defaults.

- macOS Sonoma- still no fix for the external monitor issue over USB C or HDMI Adapter on my MacBook Pro with an Intel chip. I think they are simply ignoring it.
