Loving GraphQL but feeling lost
I know it's not Sequelize, but this boilerplate with MongoDB can serve as an example on how we do things GraphQL, how to structure files, etc.
-
Do resolvers cause a lot of extra database transactions?
In terms of structure, how we do it, you can see aworking example here (very opinionated), but it can serve you as a way to wrap your mind around all these concepts.

Can anyone provide me with links of some well-maintained production grade servers written using NodeJS, and Apollo-server?
You mean you want to see the source code? We do have such servers built with our framework. There you have guidelines on how to do things and here you've got a boilerplate. I cannot share the source code of a real production app with you unfortunately, but if you have specific questions (how to protect against nested deep attacks, etc) I can gladly answer you.

Kaviar Web Framework is slowly maturing...
Ok, but MongoDB can be very much be made relational: https://github.com/kaviarjs/nova also, I've seen MongoDB being used as the main database in very large scale projects.

Touching on the relational topic, this is why I created Nova to have relational data as fast as SQL without sharding limitations: https://github.com/kaviarjs/nova

Why is SQL better for relational data than mongo
You should take a look at Nova https://github.com/kaviarjs/nova faster than SQL for joins.
