Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

How to hide Select All from a checkbox multi-select
You mean the "Microsoft Multivalue control" extension? This extension ist opensource. So you can fork this extension, remove the "select All" functionality, release this version to the market (public or private) and use your own version in your ado. Is it possible to create a query on ADO that calculates how long a work item has been in each state for?
Take a look at FlowViz. It has, among others, a report that does exactly what you're looking for.
