ESP-IDF devcontainer + vscode and the ESP-IDF plugin? Maybe it's worth me seeing if work will let me publish our docs around it, but it was pretty much as simple as following the ESP-IDF plugin's own documentation:

Project ideas to learn TCP/IP
I recommend getting yourself an ESP32 devkit (either ESP32-DevKitC or ESP32-S3-DevKitC-1 variants), grab https://github.com/espressif/esp-idf SDK, and trying out both WiFi and BSD Sockets usage examples using VSCode + Espressif IDF or PlatformIO plugin. Hopefully you already have an existing WiFi network at home to use it with. Avoid Arduino, MicroPython, and such dumbed-down framework anything and stick with just using ESP-IDF provided APIs directly.

Installing IDF in VS-Code
Not sure what tutorial you are following but I used this one on github (https://github.com/espressif/vscode-esp-idf-extension/blob/master/docs/tutorial/install.md) and didn’t have any issues, I appreciate that doesn’t help you if it’s the one you’re following.

ESP-IDF, WiFi, MQTT and SNTP using PlatformIO
What's next for this project? Unless I discover (or someone points out) shortcomings, it is complete. I've copied it and am now working on a project to publish BBQ temperature readings to my Home Assistant controller so I can get nice charts without having to manually record temperature readings. That is work in progress at https://github.com/HankB/BBQ-temp-publisher. I've got the analog inputs working and have determined what resistor I need for a voltage divider with the temperature probes. I need to fully characterize the sensors so I can produce a function to convert ADC readings to temperature.
What are some alternatives?
