New vim user. This is what I’ve been searching for
I prefer mapping caps lock to control instead (and make caps lock+fn actually toggle caps lock for the rare cases when I need to type all caps text outside of Vim; in Vim, I use tpope's vim-capslock).

How to switch the words on either side of dashes?
If your caps lock key is broken, you can always use tpope's vim-capslock to convert your upper-case characters to lower-case. 🙃

There's also tpope's vim-capslock.

Can't find F13-24 labels
You can create F13-F24 purely in software with key mapping tools. On Windows, one way is with the PowerToys Keyboard Manager: remap some unimportant keys to F13, F14, etc. Another way is with KMonad (cross platform), and define the keymap with KeyF13, KeyF14, etc.
