[Help]: Need help figuring out Neovim 0.5 config for React / JS
You can have a look at my config I use nvim-cmp, nvim-lsp-ts-utils and lspconfig, for formatting I use null-ls, which is setup by nvim-lsp-ts-utils and eslint lsp server for diagnostics. Other then that, it’s just typescript language server for the other stuff and treesitter for syntax.

Disable single capabilities for a given LSP server
Did you try setting it to false instead of an empty object? Just a guess, but I believe that should work. If not there is a way to override the capabilities in the on_attach function. I do it in my config for tsserver (just search tsserver, can’t post a direct link to the line from phone)

Yes, you can provide any option, just need to convert them to camelCase. You can see my prettier settings here

What "set and forget" flexible VIM setup would you recommend?
I would say if you're going full neovim, take a look at people's lua configs and see how they're accomplishing the things you're looking for.
