[Help]: Need help figuring out Neovim 0.5 config for React / JS
You can have a look at my config I use nvim-cmp, nvim-lsp-ts-utils and lspconfig, for formatting I use null-ls, which is setup by nvim-lsp-ts-utils and eslint lsp server for diagnostics. Other then that, it’s just typescript language server for the other stuff and treesitter for syntax.

Disable single capabilities for a given LSP server
Did you try setting it to false instead of an empty object? Just a guess, but I believe that should work. If not there is a way to override the capabilities in the on_attach function. I do it in my config for tsserver (just search tsserver, can’t post a direct link to the line from phone)

Aftermath of switching from VSCode to Neovim
All these thoughts I've shared, I would have them on occasion - but ever since I switched to Linux and Neovim, my curiosity has been through the roof. Switching over to Neovim and Linux was a not so fun weekend of configuration and spending half a day getting my work's local dev environment running on my new OS (which no one has tested development on).
