What's the best xmpp server?
There is also Tigase XMPP Server (https://tigase.org/, https://github.com/tigase/tigase-server). We try to make the default configuration as close as possible to the compatibility. There is also nice web installer to help setting everything up.

What's more, Tigase is open-source: https://github.com/tigase/tigase-server (there is one commercial component but that one would be useful to you only if you want a cluster cluster installation with a lot of cluster nodes and millions of connected users)

Group chat that doesn't allow DMs?
There are a few open source locally hosted chat services out there. "let's chat" is one I just came across with a quick search, running on a node.js + mongodb backend.

Looking for a good, compatible, simple to host chat program.
If Let's Chat used PHP and MySQL, it'd be perfect, but it uses MongoDB, which I can't use, and even if I could use it, I don't know how I'd configure it.
What are some alternatives?
