I created an example demo project for a GraphQL endpoint server that will generate JPA queries to only fetch the necessary fields by selecting and joining only what's necessary, SQL wise using QueryDSL.

If you're considering Spring Data JDBC or R2DBC you might want to also consider https://github.com/infobip/infobip-spring-data-querydsl. It has an embedded annotation processor that generates required querydsl Q classes and the library adds quite extensive querydsl support to both JDBC and R2DBC.
What are some alternatives?
JHipster - JHipster, much like Spring initializr, is a generator to create a boilerplate backend application, but also with an integrated front end implementation in React, Vue or Angular.
