Dactyl case from JLCPCB
Well I do not have experience with long-term usage of white resin, maybe it'll take a year or more. You can always spray-paint it if it happens (I do that right away). Black ones are more dark gray, yes, I quite like it though. You can take a look on my photos https://github.com/zzeneg/picachoc36

As for layouts, my fingers prefer to have 3rd/4th pinky keys on the side, like my PicaChoc36 https://github.com/zzeneg/picachoc36

APT (V1?) vs Engram
u/AlSaMoMo has an amazing Rommana (a project with u/rafaelromao?), with a slick Hands Down Neu mod. I'm working on a similar board, which will have a mod of Hands Down Vibranium, which already has even further reduced center column usage.

Any ergo keyboards with no pinky keys?
I use boards with 30 to 36 keys, but only 28 are used most of the time, and each pinkie is responsible for a single key. I think it can't get any better than that for pinkies. Here are some pictures of my smaller board, a Rommana.

Hotswapable Handwired Rommana
A Rommana built using 3D printed solderless hotswap sockets, twisted wire connections and preasure monted MCU. It is obviously not that stable, but it works.

FauxBerry: Handwired Hotswap RP2040 in a FFKB case.
My next one will be a modified Rommana. But it will take some weeks to see the light.
