Linux for audio on a professional level (studio/live)?
If you need Windows software for VI, I recommend to use software for managing multiple prefixes. This way you can setup ideal environment for each software (if you use multiple ones) and try out if one environment fits or if you need to adjust the environment. I use phoenicis ( https://github.com/PhoenicisOrg/phoenicis ).

Where does PlayOnLinux get its Wine versions builds from?
I haven't checked with a network debugger, bug I believe they build each Wine version and store the binaries on their own servers. https://www.playonlinux.com/wine/

Running games that do not need installation with PlayOnMac
I’m not sure what’s wrong in the PlayOnMac Catalina+ client as that’s not something I’ve look into, only I’ve assisted with phoenicis-winebuild no other components outside of some tested when requested.

I’m using playonmac, and im having issues using steam. Is there anyone here i could ask for some help? Thanks in advance
Unless someone wants to deal with cross-compiling gnutls along with all of it’s dependencies in linux-amd64-wine_osxcross it’s not going to work.
