What text readers do you use in terminal?
I use nvimpager, because it can share parts of my regular neovim config: I get the same custom colorscheme and keybindings, etc.

What text editor do man pages use?
The less keybinds are configurable, or you can use a different pager altogether. Personally I use nvimpager for man pages.

environment.variables does not work?
I just wanted to set my pager to nvimpager, which I installed by adding `nvimpager` to my `environment.systemPackages = with pkgs; [...]`. Then I also added this to my configuration.nix:

Maybe you could use this plugin? https://github.com/lucc/nvimpager It's a long time since I used it so I don't remember whether it does exactly what you described.
