Best way to hydrate html rendered by php?
Yes, that's true. SSR solutions in Node fix that issue by reusing the same component, which is easier when the back- and frontend are the same language. I did find today a package that fires up an V8 JavaScript engine to render the component from a php-file. See https://github.com/spatie/server-side-rendering Not tested yet.

It is not that hard if you know your way around Symfony, webpack and nodejs. This package by spatie is a great starting point. https://github.com/spatie/server-side-rendering
