Looking for datapack tutorial/guide for begginers
Well, the best what I can recommend is checking out Cloud Wolf on youtube. He has a lot of tutorials and other quick-made datapacks which you can learn a lot from just by watching. As for the text editor, I prefer sublime text 3 with a package for MC datapacks

I understand json, but need help with minecraft specific terms
Actually finally 😅 bridge., if you can access it, also is a great tool for Bedrock development, I personally don't use it that much though. The link has more information about it. It also comes with some features like custom commands (to a limited extent) which regular add-ons don't offer.
