Statistics courses for dummies?
My undergrad data science professor posts all his assignments on GitHub. Its a textbook free class so the assignments have everything you need in them. You'll probably need to do some R tutorials to get a hang of the document format but it's completely worth it. He has each assignment organized by topic so you can jump around if you want to.

I'd recommend looking for a copy of Harville's Matrix Algebra for Statisticians. Also download a copy of the matrix cookbook to have as a quick reference for homeworks or studying proofs. There is a similar stats cookbook that you may find helpful, but it's not as useful as the matrix one.
