Is Vim really worth it?
Learning basic movement in vim can take about an hour or more, but setting up your own custom configuration that you are happy with can a month or longer (unless you use a preconfigured vimrc, but then you run into the issue of not understanding how to fix things if they break or not being able to add configuration to scratch your own niche itches). Switch from VSCode to vim
My suggstion is do whatever you want. It's your config, not ours. Just know that if you stick to vim you'll eventually realize that your own personal workflow likely wont require a lot of plugins. I found https://github.com/romainl/idiomatic-vimrc useful as a reference when crafting my own config. I think it's a solid write-up.

Any tips on how to get the most out of vim??
I also recommend you use nearly blank vimrc. You should roughly understand each line in your vimrc. Use :help and google learn more.

FOSS alternative to VS CODE for Arch Linux
You can find distributions with plugins for those editors, like Doom Emacs or space vim. These days, I enjoy doing (neo)vim configs (with lua). Both can use the language server protocol (with different plugins or natively in neovims' case) and so you'd get similar setups done like in code.

Opinions on pre-made configurations (e.g. LunarVim, AstroNvim)
I'm considering picking up a pre-made configuration project as my Neovim daily driver, but boy, there sure are a lot of them. SpaceVim, CosmicNvim, AstroNvim, LunarVim, NvChad, and many more I'm sure.

Vim distros: LunarVim, AstroVim, IdeaVim, … how they differ one each other?
The only Vim distro I'm aware of is SpaceVim (https://spacevim.org/). I just tested it for a short time but it couldn't compete with my hand crafted settings ;-) But I'm using some of the plugins of SpaceVim in my setup, eg. vim-which-key and vista.vim.
