Setting temperature with automation
I'm no sure you can trigger automation from temperature changes as you want. Rest of automation should be doable with shortcuts but that first part is problematic. I might be wrong so wait what more experienced are saying. Only thing I could think of is use of dummy switch that works on schedule. https://github.com/kbrashears5/typescript-homebridge-schedule This way you can make switch that turns on/off at set interval and use it to kickstart your automation.

I picked up a levoit smart humidifier with VeSync app from Costco recently. Nowhere did it say it could work with Siri for voice. The company sent me how to link it via Shortcuts. It was a weird way to do it. Here is the (not perfect) sequence. You'll have to poke around a bit but, it works.

UK Air Purifier options for HomeKit / HomeBridge?
I am using an air humidifier from them - Classic 300S. Looking at the plug-in page they support all of the Core branded devices https://github.com/RaresAil/homebridge-levoit-air-purifier Both air purifiers and humidifiers from Levoit work via the VeSync app and are integrated via the app’s api. So your purifier will need to have WiFi access. Apart from the initial setup of the device you won’t need the VeSync app afterwards. At least the humidifiers work great in HomeKit with time or presence based automations.
