Just looking at it, it looks like the homebridge-honeywell-home plugin would work.

Best Thermostat for HomeKit?
The custom support people were awful in handling the situation. I use this Homebridge plugin to connect it to HomeKit now, and it’s been solid for the most part, but it relies on their cloud.

Honeywell T6 Pro thermostat almost always shows as NO RESPONSE in Home app
Yep! Same issues here and it drove me crazy! Resetting the router, re-adding the thermostat, disabling 5ghz band… nothing worked. Until I added the thermostat to my homebridge instance via https://github.com/donavanbecker/homebridge-honeywell-home and since then it worked flawlessly!

"Failed to check registry.npmjs.org..." error
I can't even search for plugins without getting a similar timeout error. I've tried everything in the Troubleshooting page, and the only thing that works at all is disabling ipv6 on my Eero Pro 6e network, which seems like a less desirable option. The Pro 6e doesn't have Homekit security features, and I don't have advanced security turned on. I've tried disabling ipv6 on the RPi and in Homebridge, but I'm only following random posts I find online, so I'm not even sure if I did that correctly. Sometimes I make a change and can no longer get into Homebridge through the portal, then I have to reinstall.

hb-service is part of the config-ui-x plug-in. You’ll need to install that first.

You should be able to remove specific accessories from displaying in Home via your homebridge, you can start homebridge in insecure mode: https://github.com/oznu/homebridge-config-ui-x/wiki/Enabling-Accessory-Control which should enable you to control accessories.
