No camera video feed, only snapshot first frame
homebridge-camera-ffmpeg hasn't been updated in several years and it was having issues even back then. I'd probably consider it to be a dead plugin.

Can’t get Homekit motion detection with camera-ffmpeg to work?
So I bought a couple TP-link C100 cameras and paired them with Homebridge and Homekit with the camera-ffmpeg plugin. Everything works fine, except motion detection. I’ve tried the suggested workaround creating a dummy companion switch for the cameras, the switch gets created but only triggers a notification if I trigger it manually.

HomeKit Secure Video coming to Nest Cameras via Starling!
As I think we previously said, the challenge with making Nest work with HSV is the Nest part, not the HSV part. The HSV protocol itself is not particularly complicated, and has been well known for at least 2 years, see for example https://github.com/Supereg/secure-video-specification

I know HKSV isn’t supported yet, but how does the recent Apple announcements with respect to HKSV change things? Anyone an ‘Apple developer’ who already has access to beta’s happen to look into it yet?
To answer OP’s question, HKSV’s spec has been published already. Currently it isn’t implemented in HAP-NodeJS (HomeKit accessory protocol), but there is a POC.
