IP webcam app
I found this https://github.com/guardianproject/haven which has the right features but looks like the project is abandoned. The app can not be installed on my Pixel 7, is not supported.

App to record noises at night?
Haven, available either on F-Droid or Google Play.
-
Is there an open source Fdroid app to record audio only when there is a sound?
Haven might be what you are looking for. It can activate sound and video recording upon noise, light and vibration. It is in the IzzyOnDroid Repo or has its own repo. Check the project page: https://guardianproject.github.io/haven

Show HN: I record myself on audio 24x7 and use an AI to process the information
Even better is something like the Guardian Project's Haven(https://github.com/guardianproject/haven) which IIRC Snowden contributed to.
It's incredibly cost-effective to just buy an old Android phone (which comes integrated with multiple microphones, with good signal processing and noise cancellation), instead of building it with components.
Haven is specifically designed for intrusion detection, and for preventing people from tampering with your laptop for instance by detecting activity on the Android phone's sensors.

Need a good hidden camera, something small and affordable.
Adding to what the other commenter said, you may want to check this app: https://github.com/guardianproject/haven

Motion Detection App
Haven( GitHub ) from the guardian project: it's a good open-source motion detection app.

All good things come to an end
You could retire it to a personal surveillance camera with haven (needs a sim for registration though). With root, you could even set a charging limit so the battery doesn't die.

Changes we're making to Google Assistant
So perhaps it's a good day to call for contributors to add more actions to https://github.com/Stypox/dicio-android ? If Google wants to remove features, they can be replaced by something that doesn't have that problem.
- Dicio: The free, privacy friendly open-source Voice Assistant that runs solely on your phone!

Voice input / speech to text
I've just discovered Dicio, a promising voice assistant and speech-to-text app that is pure FOSS. I'd love to use the apps's speech-to-text capabilities system-wide. Reading through the Github page of the app tells me that this is possible.
-
Is there a Foss speech recognition and Text To Speech to replace the Google one?
Dicio is the onl one I know. Since version 0.8 it can be used as a general SST engine from any app (didn't test it personally tho)

You can use open source assistant instead like Dicio https://github.com/Stypox/dicio-android and configure it the way you like.
