Can somebody help demystify cartridges for me?
I've done a couple variations of what you're asking with CC specifically. It's definitely possible! The easiest solution is to get a flash cart from InsideGadgets. While more expensive, their LinkNLoad carts let you flash the rom over USB so you won't need to buy an additional flasher like the GBXCartRW. This cart specifically even has FRAM for battery less saves. They even have a GBA size version of this cart. The caveat here is that you need a console that is backwards compatible with GBC carts. If you don't have a backwards compatible console you'll have to go the goomba route with a reprocart. There is an improved goomba that will enable battery less saving. Flashing repro carts is more difficult but a good resource would be the InsideGadgets Discord channel.

Can i play GBP / GBC roms in an EZ-Flash Omega?
You may actually be able to get Goomba working on it as well by downloading it from GitHub. https://github.com/lesserkuma/goombacolor/blob/main/goomba.gba and running it.

Game won’t save
This kind of cards are SRAM, but no battery. So just sram patch will do nothing. OP needs patches from this repo: https://github.com/acocalypso/batteryless-patches

Any way to fix this?
If you’re able to do all that you can use this site for the patch. https://github.com/acocalypso/batteryless-patches/tree/main/patches/GBA/Pokemon

Castlevania Aria of sorrow save patch
Hmm, looking into it it seems to opposite problem actually. Aria of Sorrow already uses SRAM, but these carts only support FLASH. It seems what you need is a "batteryless patch", I found this repo but it doesn't seem to have that game, sounds like the best place to make requests is BennVenn's Discord, might be more in there too I dunno.
