Firefox Multi-Account Containers
Firefox Multi-Account Containers divides your browsing into separate color-coded tabs. Allows you to set up proxies and then assign each proxy to a container. Thereafter, each request coming from a particular tab in the container will use the appropriate proxy. electricheat explains, "I use [it] all the time. Either for different accounts, or for having certain tabs use certain proxy configurations."

Mullvad blocked by streaming apps and certain websites
I don't have a solution, but a potential part of a solution. If you're using Firefox, this addon allows to chose different proxies (and hence different IPs) for different containers. Should you find one Mullvad server that works (perhaps one that was recently added), you could make sure that your Netflix container always goes through that server, regardless of what server the app is connected to.

Additionally, you can have proxy servers configured per each container with this extension: https://addons.mozilla.org/en-US/firefox/addon/container-proxy/

Tabby: A terminal for a more modern age
iTerm2 is a great terminal for macOS. I use it extensively every day. Despite that, I would gladly try out other terminals because it's fun and because I'm always open to finding something superior to even the great tools I use.
That said, there is exactly 1 feature that seems to only exist in iTerm2, and until another terminal emulator appears that has it, I'm staying put: tmux control mode.

What kind of applications are missing from the Linux ecosystem?
I've found Tabby does a good job and is Cross-Platform to you can use on Windows too. It can run any installed shell, serial connections and ssh. You can create profiles. It needs some work to be fully functional in Wayland i.e. Autohide feature doesn't work. But that's a graphical issue. Though, if you're just after creating and organising SSH profiles not terminal emulation, Remmina already has you covered. SSH, RDP and VNC.
