Speech to text without Google
If you need English, you can use an app that is in F-Droid, Kõnele, either together with a self-hosted Kaldi GStreamer server running on a computer, or together with an app that isn't in F-Droid (yet!) called LocalSTT, specifically the English fork of it (as it originally includes speech modules for Catalan); this app used Vosk as a local backend on your phone, the same as another poster linked, and integrates seamlessly with Kõnele for providing an actual frontend compatible with Android speech intents.

Known drawbacks to CalyxOS?
If Dicio glitches for you (it has trouble downloading the models sometimes), you can try the Vosk demo app instead. It will just print out what you say.

was Myroft not meant to be an opensource, *offline* voice assistant ?
