I found this discord stat explorer which tallies up a user's ten most messaged users, ten most messaged channels, how many distinct people they've talked to, etc. Is there any resource or adjustment I can make to change the stats from covering only ten to all the users I've spoken to and all the channels I've spoken in?
is a site that gives you statistics using your discord data risky? in terms of having data stolen/being hacked.

Is Discord Data Package Explorer safe (third party software that displays your data package visually)?

It's open source. Most of the computation is done client-side (your data does not leave your browser), except the user resolving, for which certain user IDs (‘top users’) will be sent to another open source service to retrieve the user avatars and names using Discord API (this can be prevented by disabling internet, either physically or via DevTools). So I think this particular site is relatively safe. Stay extremely cautious with such services, though.
