Great point. I noticed that Purely Mail allows "on the fly" aliases, too, via the Custom From (https://github.com/r3c/custom_from) add-on to Roundcube.

Bonus: If you're using RoundCube in the setup described above, install the custom_from plugin. Postfix adds a header X-Original-To which you can use automatically as the From: address when you hit Reply.
