Easy crypto mining
You could totally do a day or two on compiling and using cpuminer. That's about the easiest 'from scratch' type thing I can think of for crypto and linux. Same is true for compiling wallets. You could go a step further and with an additional XU4, you could launch your own coins and host the network in your lab.
