Is FontAweSomeFx still maintained?
It looks like it's not anymore. A possible replacement you could look into is controlsfx. It has a Glyph class https://github.com/controlsfx/controlsfx/blob/jfx-13/controlsfx/src/main/java/org/controlsfx/glyphfont/Glyph.java which could be a starting point. Have not used it myself yet. Also still using FontAwesomeFX

Is this UI doable with only using Java Swing?
It's possible. Requires dedication though. In Javafx is possible too. A close project like what you're requesting is TileFX project in Javafx. Check it on Github... Github TileFX
