Because of EU rules it is no longer possible for my university to use Overleaf. Does anybody have any other recommendations (preferably free but everything will do) that can handle the sheer amount of equations that go into a physics rapport. Thanks!
I am the CEO of CoCalc, which is an alternatives to Overleaf that they don't own. I don't know whether or not our rules about personal data collection are compatible with your university requirements. Our default rules are at https://cocalc.com/policies, but we have been able to make modifications to them for particular customers. We also have a small easy to install on premises version here https://github.com/sagemathinc/cocalc-docker, and sell a more complicated Kubernetes-based on prem version of our software, so you control all data. In particular, it could be that we've already worked with your university to use CoCalc for collaborative Jupyter notebooks for teaching (that's the main thing CoCalc is used for, not latex), and that's something we can discuss in our support channels.

What you gonna add to your selfhost stack this year?
Mail - probably with mailu; and a multimedia server, but I haven't decided yet which one zenphoto? piwigo? lychee? or others?). Maybe seafile, although I probably don't need it given my use now of Syncthing and a backup strategy. And maybe... CoCalc (https://github.com/sagemathinc/cocalc-docker) as it'd be great to be able to run this from any machine, rather than having to manage software for different platforms.

Recommended docker-compose for homelab monitoring / observability stack in 2022/2023?
Dockprom is a solid starting point. It gives the essentials and you can tweak it to your liking. For example I forgo Alertmanager (for now) but have added more exporters, data sources, etc.

Homelab infrastructure "overview" software
For tracking stats - Grafana, paired with appropriate backends. Dockprom is a nice starting point as it comes with most things preconfigured. You just need to tweak them accordingly.

What's a good monitoring tool for small servers like Intel NUC with N3160 processor?
i used Dockprom (https://github.com/stefanprodan/dockprom) at one point, it looks and works well however I found the CPU usage at the time higher than it should be. Your CPU would handle it easily, but it was still causing 10% CPU usage which i didn't like. I don't think this is a widespread common issue it's a very popular project but just a heads up to keep an eye on CPU if you decide to test it out.
