The number of mentions indicates the total number of mentions that we've tracked plus the number of user suggested alternatives.

I've followed the instructions at https://github.com/neoclide/coc-pairs to install the autopair extension for coc:

Any idea which extension/plugin this is that shows a preview of the colors written in their hex value?
Are you sure it's not coc-highlight? Or is it both?

coc.vim adding color previews to css etc. even though I don't have a coc highlight extension installed.
If coc is to blame, it sounds like you have an extension like coc-highlight installed.
