Personally, if you want PID, I'd go https://github.com/medlor/bleeding-edge-ranciliopid with using a ESP32 (S3 if possible). Setting up system just for PID is super simple but then gives you options to expand functionality later on.

Look what I found in the boiler.
I'm basing it on a couple of things but for the main app/control software I'm using https://github.com/medlor/bleeding-edge-ranciliopid with an esp32 for the number of pins but also going to be referencing http://espresso-for-geeks.kalaf.net/features/pressure-profiling/ for the pump side of things.

What Is a PID Controller in an Espresso Machine?
The first image is a Rancilio Silvia espresso machine. If you like DIY, you can add your own PID with an ESP32 (wifi-enabled cheap microcontroler), a thermocouple (to measure the temperature of the boiler) and a solid-state relay (to turn on/off the boiler heating element) for less than $40. I did it in my own machine following this repo: https://github.com/rancilio-pid/clevercoffee. I have perfectly stable temperature, I can turn on the heating from my bed (with MQTT and HomeAssistant) and I used the occasion to fully understand how my machine works (which tbh is always a big part of the motivation for doing these kind of projects).

I finally finished my project on Silvia. Insulation and vinyl wrap done :)
