.txt and .md files in a folder I sync with Syncthing, and edit with Sublime Text 3 on my desktop machines, and Editor[1] on my phone. I create a file per topic, e.g., `ruby.md`, `docker.md`, `cooking.md`, and switch quickly between files using Ctrl + P in Sublime Text.

Google is about to make life more difficult for custom ROM fans
Most custom ROMs don't seem to use the AOSP dialer anyway. I've mostly seen forks with some nice features Google's dialer still lacks (called recording, for one).
AOSP hasn't been a useful Android distribution for years. Luckily, you can make it useful through third party apps like the Simple apps: https://www.simplemobiletools.com/
