DIY
I don't think you're insane - everything you said is possible. A Bluetooth audio transmitter for connecting to the car stereo should be easy to add if you took one of the commercial ones apart and connected it to the charging adapter. As for the OLED remote - here's something I've come up with: Image, GitHub , but it's far from perfect.

Sony MZ-N505 remote control codes
What do you mean by 'control codes'? The MZ-N505 should follow the 'new' remote protocol. You can find more info about it here: https://github.com/izzy84075/md_sigrok_decoders and here: https://github.com/asivery/Sony-Inline-Remote-Emulator

Reading track name data from DataStream to display on external DIY display
If you're talking about the Sony remote connector, yes, the remote protocol is being reverse engineered. We don't know everything about it yet, but right now it's possible to decode the data from it. If you want more info about how it's going, join the minidisc.wiki discord. Here's my repo of the remote emulator / decoder: https://github.com/asivery/Sony-Inline-Remote-Emulator and here's the repo of izzy84075's remote protocol decoder for PulseView, that my inline remote emulator is heavily based on: https://github.com/izzy84075/md_sigrok_decoders
