Success: Big Sur 11.2 on Dell XPS 7590 with intel wifi! Finally got it working after hours of debugging and reconfiguration.
Also, for the brightness keys to work, I think this SSDT patch would help you https://github.com/bavariancake/XPS9570-macOS/blob/master/EFI/CLOVER/ACPI/patched/SSDT-BRT6.dsl

I wanted to try out this guide when I have a little more time available, with a replacement board and replacement CPU so I don't brick my machine.
