What plugin was this and how did they do it?
Hex codes were added in 1.16. Most chat for matters support them. You can use the search term “Chat formatter” when looking for a plugin. I like a specific fork of VaultChatFormatter, though it doesn’t have too many features. A good choice if you’re using essentials would be EssentialsChat. There are some other pretty nice chat formatting plugins online that I don’t know off the top of my head.

Trying to add Gradient names need help!
Tbh, I’d recommend moving away from EssentialsChat to something else. There’s a fork of VaultChatFormatter that I think works really well.

Building a Scalable Live Stream Chat Service with Spring WebFlux, Redis PubSub, RSocket and Auth0
