There's a foundry module called PF2e Companion Compendia that has all the Eidolon feats and stuff. Ask your GM to get the module then you can build your eidolon using a PC sheet. Just keep it's health at 0 and manage your joint health with your summoner's sheet.

For companions and eidolons you'll want the PF2e Animal Companions module, which gives you a few new compendia that all start with CC. From there, make a new character sheet (a player character one) and drag over the appropriate Eidolon, Prototype Construct, or Animal Companion Ancestry.

There is a module for managing animal companions - PF2e Animal Companion Compendia. It essentially provides a few additional compendiums that add actions, ancestries, and feats for animal companions. You make the animal companion using a regular PC character sheet, but instead of choosing "Elf" or "Human", etc., you choose "Bear" or "Cat".

PF2e Quick Rolls, the one listed in the modules list is outdated and the author is swamped with work so they haven't been able to fix some of the bugs or keep up with core system automation but an unlisted fork handles the missing bits (though that author is in a similar situation).

Quick Rolls (the module) handles attack rolls and gives you the degree of success automatically. This fork is more functional and still works for spell saves as well as attack rolls. Neither module is likely to be updated and eventually this will be working in the core system. You use either of these by targeting the other token (the arrows pointed at the token, double right click or use the targeting tool in the top left menu), then rolling the attack. For spells put the spell card in chat, target the token and select the spellcaster (an annoying quirk introduced at the same time the main branch of quick rolls stopped working), then click the save DC button in chat. You can have multiple targets at once for things like AOE spells and whatnot.

Pathfinder 2e Quick Rolls - Liquid Sonic's Edition: Brings some automation to attacks rolls and saves. Also defaults to an unmodified roll when you click a button on a character sheet, only bringing up the modifiers dialog if you hold down shift while clicking. This one you have to install manually as it is not in the Module library (the original is, but it doesn't currently work well). LiquidSonic has done a rewrite for this module as it appears to have lapsed in updates. I think that there might be a plan to integrate it into the base pf2e system, but that has not happened yet, to my knowledge. Anyway, linky here.
