What is a good modpack for 3 players that can be interesting to BOTH beginners and experienced players?
I'll start by telling you to avoid gregtech. I like gregtech, but I honestly don't think its a good intro to modded Minecraft. I think a certain mindset is needed to play gregtech as well as at times an annoying amount of grind. So I'm pretty much saying to ignore the people saying Nomifactory(dev, ceu, or one of the other versions) and GTNH(fun, only playable beyond HV if you have no life). If you do choose Nomi, download the dev version, theirs quite a number of quality of life improvements to the one on curse. I'll leave a link below. https://github.com/Nomifactory/Nomifactory

Why did they remove the Processing Arrays ?
The community update? As in version 1.2.2? I don't believe they were ever in such an old version. Processing arrays are available in the dev version you can download nightly builds from here: https://github.com/Nomifactory/Nomifactory

For a more up to date version, check out Nomifactory. 1.2.2(.1) is available on CF, and a dev version (1.3) which has even more updates since 1.2.2(.1) is available here.

Omnifactory to Nomifactory
If you follow the instructions from the latest release you should be fine

Omnifactory or GT:NH
Overall it is probably worth mentioning the play times required. Omnifactory is possible to 'beat' in under 6 months playing a few hours here and there. GTNH will on the other hand require several years of dedicated effort to 'beat' the pack if you even can. Side note, if you do choose to play omnifactory, go get the dev version listed on the github. The public release on curseforge is horribly out of date and includes so many bugs. The features and content that have been added in the dev version are extensive and it is very stable.

Dawncraft Worth Using?
If you want a better "hardcore" modpack, Rebirth of the Night is a classic. It's a bit old on 1.12.2, but it's actually well put-together.

Will we ever return to the golden age that was 1.12.2?
Of course, pack authors always have the choice to choose a "target version" and stick with it. Some modpack efforts have done just that (GT:NH, ROTN). But mostly we're subject to the whims of Mojang, for better or worse. And I think I would say better. There's few other games that have a modding community as fleshed out as this one.

Is Minecraft a good "survival game"? Is it still fun in singleplayer?
You'll find the experience you're looking for in Rebirth of the Night which makes Minecraft into a true survival game while using it's strengths to it's advantage.

If you want to start off easy, maybe try a kitchen sink pack like Direwolf20 1.19, or if you want combat, a pack like Rebirth of the Night or Vault Hunters
