The sumnkeo_ lua formatter uses EmmyLuaCodeStyle behind the scenes which you can really fine tune to your own liking with .editorconfig.

Taking a look at the PR, looks like the server is using EmmyLuaCodeStyle, which tries to respect equal sign alignment when it's able to detect that.
