Has anyone used Wolverine with F#?
I've been looking into using it with F#, mainly in conjunction with Akka.NET and Akkling/Wakka wrappers. I've only sniffed around to see if there's need for Hyperion/POCO serialization or other "band-aids" -- but have only just started looking at it. I think it holds a lot of promise, as the C# implementation I did at work was really nice. FYI there's also a nice Marten wrapper here https://github.com/TheAngryByrd/Marten.FSharp

Can anyone suggest any interesting F# projects?
F# works really well with event-driven architectures. Event sourcing and MVU/Elmish both work well with immutable data (you can't change an event after it's happened!). Discriminated unions are fantastic, and F# event sourcing/MVU libraries make liberal usage of them. Elmish is a frontend agnostic MVU library that has WPF/Javascript/WebAssembly implementations. On the event sourcing side there's Akka (though this is more actor model) and Equinox whose maintainer is incredibly friendly.
