They're playing an IronMon run, which as far as I'm aware is just vanilla randomized firered but with insane rules. They use this tracker for the UI thing, but it's not actually anything in-game.

FRLG+ has a challenge mode like B2W2 (it only affects Gym leaders and the League I think). The game gives you all Gen 1 Pokemon and most Gen 2 Pokemon in the postgame.
