Minecraft non euclidean parkour is insane!
To make things like this you can use a block called the Portal Helper (for simple things, make two frames with it and light one with a flint and steel) or use commands as described in this wiki https://github.com/qouteall/ImmersivePortalsMod/wiki

For some reason, it's shadowed in the mod build.gradle, causing it to be loaded when immersive portals is loaded.

When I join my singleplayer world, after a few minutes all menus such as chests, inventory, villager trading, even the esc menu turn invisible. It didn't start until after I removed lamb dynamic lights from my mods folder. More info in comments.

How to get a menu like this for galacticraft?
You want Just enough Items, but I would suggest getting Had Enough Items which is a fork for 1.12.2 that is far more optimized, you can get Galacticraft suite complete for 1.12.2 as well.
