Half-Life 25th Anniversary Update
Aside from the obvious meaning of your comment - there is a mod which makes Alyx playable without VR: https://github.com/bfeber/HLA-NoVR

Xen
There is a non-VR version! You can find it here: https://github.com/bfeber/HLA-NoVR It's a bit rough at least for now and the game was made for VR but it's better than nothing.

Issues with jumping in source 2.
if you want to map and test without VR your best bet is to use this for jump properly: https://github.com/bfeber/HLA-NoVR

Half life alyx no vr
Okay, I tell this to everyone, a first gen quest is about 100 dollars used on eBay, a link cable (3rd party) is about 20-50 dollars depending on quality. Much better experience than a novr version. My old pc had an rx570 which is below min spec and it ran perfectly fine. If you can’t afford the first gen quest (which I mean 100-200 dollars on a game is a bit much) then watch a play through on YouTube. This will be a better experience than a novr version. Unless your idea of fun in a game is looking through drawers and on shelfs just to find ammo. Which I don’t think needs to be stated, but it doesn’t work in a nonvr setting. As for where to find to novr mod https://github.com/bfeber/HLA-NoVR

Half-Life 25th Anniversary Update
There is a mod for that, unsure if it works with this new release though, but try it out and report back :)

In what order should I play all the HL titles?
Another option, btw, if your PC is up to it: there has been a really nice release of a raytracing mod for HL rather recently (https://github.com/sultim-t/xash-rt/releases), this also breathes some live into the old game.

MMOD v2 was released recently, and a bit before that xash-rt which is a pathtracing renderer for HL1. Combining them will not be a simple task, but needs to be done.
I'm excited to go through the original HL again. I started when the pathtracer, Xash-RT was released, but then MMod v2 dropped, and I want to combine them so bad. It's not as simple as a drop in mod though. mmod needs to be 'recompiled' to be compatible with the new renderer as stated here. In addition mmod uses new models with new textures, and they would need to be given some tweaks to support the pathtracing PBR features. (Might be nice to sneak in some ReSrced textures where appropriate too, although they do have that AI upscaled look about them)
