Have you tried OpenProject https://www.openproject.org/
I wanted something like airtable and just saw a post about Grist labs so things are looking up for me! https://github.com/gristlabs/grist-core
Maybe https://yunohost.org
I've just spun up Photoview, which is looking fairly interesting. I like the UI, and I believe it has multiple users. It still has some bugs to work out, though. You might give it a look if you haven't already.
I had an iPad in my last job and loved good-notes. Currently I am trying out xournal++ on my windows tablet and so far I am very happy.
Yes, there is humhub, Wordpress, Monica and several note-taking apps. But none of those are lightweight or have that journal style.

Check out headscale. https://github.com/juanfont/headscale
I'm sure you could whip something together with n8n.
Listmonk is pretty nice for newsletters but it's not really multi-user.
But check out BookStack if you haven't already. I might take a look at it. It has html instead of markdown if you want to have a look at the code part of the formatted content you made. I'm a bit more comfortable with html than markdown. Plus I like that I can give labels/tags and then search using them
Have you tried this https://github.com/spech66/lifelogspd
AMP has been a game changer (pun intended?)
You could try Jellyfin as a media server, it has various Android apps that can stream from it that work quite well. I haven't made up my mind yet which one I prefer, so I use both interchangeably: Gelli and Finamp.

Looks like a similar idea to Pterodactyl which is free and open source, and looks like it supports a lot of the same games as AMP.
I feel you when people showed me https://www.gnucash.org/ as a competitor to QuickBooks I laughed but it seems like that industry is not big on features or looks but just numbers:0). If you wanted to go down that rabbit hole here is a docker hub. https://hub.docker.com/r/diablodale/gnucashbuilder
It's rare that I can make a suggestion on this subreddit but I would point you towards https://overseerr.dev/ . It's years ahead of ombi (I just converted like 2 weeks ago) I really enjoy the ease of use for my users and the ability to find all movies and tv shows that an actor or actress has been in.
